? Some of OUR favourite WINES AND CELLARS from Mallorca.
1.- CELLAR CA’N VERDURA, SON AGULLO | MANTONEGRO | TOMEU LLABRES | BINISSALEM
Ca’n Verdura is the personal project that Tomeu Llabrés began in 2012, after learning about the island’s different autochthonous varieties from winemaker Francesc Grimalt, settling in a small garage in Binissalem as his first winery.
His speciality is working Mantonegro grapes for his most special wines, limited edition of 6,000 bottles.
The Merlot, Monastrell and Callet varieties also work exceptionally well.
Mediterranean character wines: light, refreshing, with aromas of red fruits and floral and spaced notes. Agile, with very good structure and a long and kindly fresh finish.
2.- CELLAR CA’N MAJORAL | CALLET | MIREIA OLIVER | ALGAIDA
A winery led by Mireia Oliver, who began her project in Algaida, and sowing little by little, began to produce wine with a clear objective: to cultivate, produce and market unique and quality wines. She has achieved it and more than that.
This wine is of the Callet variety, an autochthonous red grape, less known than Manto Negro. Wine of medium-light body, coloured, with relatively little alcohol, in mouth different taste and attractive.
In this case, its label is based on the original painting by Mallorcan artist Luis Maraver.
3.- CELLAR 4KILOS, MOTOR AMERICA | CALLET | FRANCESC GRIMALT | FELANITX
Motor America, I+D of Bodega 4Kilos led by the Mallorcan oenologist Francesc Grimalt, responsible for the recovery of the Callet grape variety in Mallorca. After his time in the Cellar Ánima Negra, with his partner Sergio Caballero, co-founder of the Sònar Festival in Barcelona, he founded the Bodega with an initial investment of 4 million pesetas (hence the name of the winery) between the two, establishing its headquarters in an old sheep stable that with a lot of effort and work, turned into the winery that it is today.
A wine that tells in its label its history and philosophy: a motor, the continuous work, study and change that its oenologist does every year adapting to the climatology. A wine that every year aims to improve and bring to market its best version. Grimalt achieves this and reminds us of Bourgogne wines, fresh, light wine with a touch of minerality, spices, slow tear, low layer and floral aroma.
4.- CELLAR CA’N RIBAS, SIO | MANTO NEGRO – CAB. SAUVIGNON – MERLOT – SYRAH | CONSELL
A winery with a great family tradition that dates back to the year 1877 and that generation after generation have maintained the legacy, always adapting to market demand, new technologies and methodologies.
Together with Chivite and Codorniu, they are the third oldest winery in Spain.
Siò is the wine that the Ribas brothers decided to produce in homage to their grandmother Siò (Concepción), deciding to make an elegant, fresh, fruity wine with mineral bottoms. Characterized by its dominance of ripe red fruit aroma, silky with good persistence, balanced and firm tannins.
Known for their mastery in manual harvesting, they select grain by grain from the vines, the grapes carefully. Year after year when the harvest arrives, students and professionals from all over the world rave about being chosen to work and learn from the Ribas family.
5.- CELLAR BINIGRAU, NOUNAT | PRENSAL BLANC & CHARDONNAY | BINIALI
Family winery located in the municipality of Biniali, began its activity in 2002, focusing on artisanal wines with native varieties such as manto negro, callet, white press and adapting foreign varieties such as merlot, cabernet, syrah and chardonnay in order to achieve high-quality wines. The vineyards and production are governed by the environmental and ecological management system, a practice that seeks to improve grape quality while respecting the natural rhythm of the plant and the natural balance of the environment. Characterized by the cultivation of the vineyards with biological products and using the biodynamic system for the work of cultivation, pruning and harvest.
Nounat, considered one of the best white wines of Mallorca. Pale yellow in colour with golden reflections bordered with greenish tones. Aromas of dried fruits, walnuts and almonds, as well as tropical fruits, pineapple and banana. Good structure, balanced acidity. Gourmand and suggestive.
