The pastry chef Lluis Perez, Hidden Icon, takes a few minutes to tell us how he has experienced this confinement and what new things we will find in this new stage after the COVID-19 in his stores.
1- CREATIVITY. What have you done to keep it active these days?
I don’t consider that creativity comes and goes. There are always moments of more inspiration, those are the ones that have to be made the most of. I understand the process as brainstorming and then shaping it. And honestly I had many accumulated in this period I have had the possibility to execute them.
How did the idea of “Els Siurells” as an Easter Mona come about this year?
As for the Siurell, it is a classic of our pastry shop, we make it since the first Easter. Our island and culture are my main points of reference to inspire me.
2- YOUR PLAYLIST. The songs that have accompanied you in this confinement
The XX has always been my “basic” and this time it wasn’t going to be less. Although I love to put the Spotify radio and discover new groups or songs; the last Sam Fender.
3- DELIVERY & DESIGN. How did the idea of home delivery come up?
The truth is that home delivery service came about as a result of the declaration of the State of Alarm. Let’s face it, it has been unexpected and very complicated for everyone, and everyone has been affected in one way or another. In my case as an entrepreneur I was forced to reinvent my business and see how I could continue to offer my products.
4. PACKAGING. Congratulations for the packaging that always continues to be the protagonist within your work, and has your imprint. Do you choose it personally?
The design part has always been essential for me, and little by little, like any “living” element, we are evolving.
Now our main objective is sustainability and, in that sense, we are looking for options with which we feel more comfortable. For the moment we have been eliminating the quantities of ink in the packaging, we have incorporated more natural materials, even recycled as far as possible, and, of course, eliminating plastics.
5. LLUIS PEREZ TOP. What do you recommend from your menu to sweeten this season?
No one’s bitter when it comes to a sweet, and we’ve got plenty to choose from. Although I’ll confess that our strawberry and orange panettone from Sóller drives me crazy.

-What to do: I love to eat a potato cake in the courtyard of Ca’n Molina in Valldemossa
-What to see: I love summer sunsets in a rather hidden little house in Banyalbufar
-Where to go: To an orchard, that my family has near Sa Pobla. There I escape to eat the fruit directly from the tree, there’s nothing like it.
