✅ Santi Taura. A charismatic chef who always bets on his land, Mallorca.
▷In a Snapshot
And that’s the key to his success. His know-how. A reinvention and adaptation of Mallorcan cuisine and old recipes cooked with top quality local products offered by their suppliers on the island.
A chef who has grown in success and fame but has never allowed that to change his way of being, his easy manner, his passion, and his simplicity.
He has founded Grup Santi Taura, the sum of his projects, where you can find his restaurants DINS, COR, the restaurant of El Llorenç Hotel, and the events he personally advises and leads, always under the same motto: “Cocina Mallorca”.

1- CREATIVITY. We know that you have kept yours and half of Mallorca active with “Ses panades d’en Santi Taura”, almost a month after Easter, people are still cooking them. Did you expect that reaction from the public? Will we see something reflected from this confinement in your new dishes?
The “panades” have been a great thing, to be able to show how we make the dough at home, the technique of the same and that it has so much acceptance I did not expect it … precisely for that reason, it has been a gift of which I am grateful, I think that you do not have to hide anything from your own recipe book because people at one time or another will cease to exist, but the memories we leave will endure in time.
And that, sharing that recipe for example, is one of those memories that can pass from parents to children… and to the question of whether we will see something of this confinement in our letters, well there will be, because one never stops thinking about what one can do tomorrow…
2- TALENT. We have met Santi Taura, the painter. Are you going to hang any of your paintings from this quarantine in any of your restaurants?
Yes! In fact I had some hanging around COR and DINS before all this happened, but now I have a choice… Hahaha
3-YOUR INSPIRATION. Who have you heard or read more about during this confinement that has inspired you?
The truth is, I haven’t had any special person as inspiration… a little here, a little there… but in the end each case is very particular and only you know what you need, what suits you and the resources you have available so the final result in my case depends not only on one factor, but on many that surround me…
4- SOCIAL. You’re one of the island’s hits in social networks. Do you like it?
I like to be connected, Instagram and Twitter are two social networks that I manage personally and that’s why I think it makes them more authentic and credible. I think it’s as important to do something as it is to make it known. For me and for many people Instagram has opened a window to the world to showcase your product in a totally “free” and personal way, without the need to resort to third parties.
5- TAURA RECOMMENDATION. What do you recommend from your menu for Phase 1?
We are not going to open in phase 1, it will depend on how everything is evolving, maybe at the end of May… in COR we are going to make some changes in the timetable, reservations and offers above all, and in both DINS and the EL LLORENÇ HOTEL are going to have very few changes, but in DINS we will bring one more menu to the two current ones we have now…
