✅ Jordi Calvache, is the owner and chef of the signature catering company, D’Calvache.
A chef who, during confinement, has adapted his business, providing home delivery service, arriving at the homes of clients and friends.
Together with other entrepreneurs from Mallorca such as Rafa Martin from Brass Club and Nadja from Artsfestum, they have brought tailor-made experiences during the confinement and managed to make it special, even on Mother’s Day, by bringing a cocktail from Brass Club, flowers and candles from Artsfestum accompanied by a tasty menu from Calvache.

# Talking
1- CREATIVITY. You are a creative in constant search and inspiration, how do you keep it active?
I started in the profession when I was 15 years old and I have gone through the different sections of our sector, learning from all the experiences lived in Hotels and Restaurants, where I have been lucky enough to work.
When you are fully motivated by what you are doing, you always find moments to take notes and then to express your ideas in a more elaborated way.
Sometimes the inspiration comes from a landscape, a traditional recipe to give it a twist and adapt it to your style, a trip, etc.
2. YOUR PLAYLIST. The music that always goes with you…
I have different playlists and depending on the time of day I choose one or the other. From contemporary music, to Coldplay, to piano music, etc
3- TALENT. What has been born of this confinement?
What has been generated by this confinement is in many cases the creativity to look for variables to your business and also to think a little more about others.
We have thought of new concepts for our events but they will not be able to see the light yet, we are pending to know the work regulations for the events sector and to be able to apply them as soon as possible.
4. DELIVERY. How did the idea of home service come about during this confinement? What have you missed about your work during this confinement?
On the first days of the confinement I decided to offer gastronomic experiences for friends and clients, so they could enjoy a special day.
The experience of gratitude and being able to see them in the distance has been very emotional.
What I have missed the most is being able to carry out the events that we had planned months ago, thanks to the work of our team. When you see the happy faces of the clients and they thank you for having had a great day. It is also a great satisfaction for us and another challenge overcome.
5. D´CALVACHE RECOMMENDATION. What do you recommend choosing from your menu?
In my menu there are several basics that are essential and required by our customers; one of our signature would be: “Strawberry filled with Caramelized Foie with Orange peel” and another would be “Grilled Scallops with Celery Puree, Kalamata Olive Tapenade and Citrus Oil”.
